Shrimp Avocado Melt
Here is what you will need in order to make this quesadilla type meal:
2 tablespoons of Irish style butter
1 tablespoon of sesame oil
1 pinch of garlic powder
Salt and pepper to taste
5 ounces of frozen cooked shrimp
1/3 cup of unsalted cashews
2 tablespoons of chopped green chilis
1 avocado peeled, pitted, and sliced
2 ounces of shredded pepper jack cheese
2 ounces of shredded cheddar cheese
First, you will need to preheat your oven to the broil setting. In a skillet on medium high heat, melt the Irish butter with the sesame oil. Season the butter mixture with the garlic powder, salt, pepper. Add in the shrimp, cashews, and green chilis and let them cook until all ingredients are piping hot or for about 5 minutes.
Place the tortilla halves on a baking sheet. Place the avocado slices on each of the tortilla halves. On top of that, place some of the shrimp and cashew mix. If there is excess butter mixture, divide it up between tortillas. On top of the mixture sprinkle the pepper jack and cheddar cheese. Place in the oven and let it cook until the edges of the tortillas are browned and the cheese is melted. This should take about five minutes.
All in all this was a very easy recipe to make. The prep time is only 15 minutes and the cooking time is 10. The meal was very tasty. The cashews provided a crunch that evened out the softness of the avocado and the shrimp. The butter and sesame oil mixture was delicious, and the green chilis added a little kick to the dish.
