Cedar Planked Salmon
This weeks recipe was inspired by my wife. She loves salmon. I am not very fond of fish, but I knew that in the process of posting new recipes and trying them out myself, I needed to stretch myself and try foods I did not think I would like. This weeks recipe is for Cedar Planked Salmon. The recipe involves cooking the salmon on top of a cedar plank on a grill. You can find cedar planks at almost any grocery store. I bought mine at Bed, Bath, and Beyond, and they were fairly inexpensive. The ingredients come together to make the marinade that you soak the salmon in before cooking it. For this recipe you will need:
Cedar planks (one for each piece of salmon you will be cooking)
1/3 cup of vegetable oil
1 1/2 tablespoons of rice vinegar
1 teaspoon of sesame oil
1/3 cup of soy sauce
1/4 cup of chopped green onions
1 tablespoon of grated ginger root (I used a ginger paste)
1 teaspoon of minced garlic
The cedar plank used for this recipe must be soaked in water before you can cook on top of them. If you do not soak them, they can catch on fire. You can get away with soaking it for one hour, but it is best if you let them soak for up to 24 hours.
Mix the vegetable oil, rice vinegar, sesame oil, soy sauce, green onion, ginger root, and garlic in a bowl. Place the salmon fillets in the mixture and flip to marinate. Cover the bowl and place them in the refrigerator to marinate for at least 15 minutes. Letting the fillets marinate for up to an hour is best.
Preheat your grill to medium heat. I searched online to find out what temperature was considered medium heat, and most agreed that medium heat was around 350 degrees. I cooked mine somewhere between 375 and 400 degrees. Once your grill is preheated you will need to lay the cedar planks on the grill so that they can become accustomed to the heat. You know that they are ready when they begin to smoke and crackle a little.
Place the salmon filets on the cedar planks and close the lid. Let them cook for about 20 minutes or a little more. Mine took somewhere between 25-28 minutes to get completely done. You will know that they filets are done when you can flake them with a fork.
I usually do not like fish because of the taste that it leaves in my mouth, but I LOVED this recipe. The glaze that I marinated it in took away the fishy taste that I usually do not like when I eat salmon. I paired the fillets with a brown rice and asparagus that I mixed with olive oil and a little bit of salt. I grilled the asparagus after the salmon was finished on the grill.
