Chicken Parmesan Bundles
I absolutely love chicken parmesan. Every time I go to an Italian restaurant this is my go to dinner item. This recipe for chicken parmesan is a variation on the original recipe. The recipe calls for no noodles, although you can add in noodles if you want. In order to make this recipe you are going to need:
-4 ounces of softened cream cheese
-1 (10 oz) package of frozen chopped spinach
-1 1/4 cups of shredded mozzarella cheese
-6 tablespoons of grated parmesan cheese
-Boneless, skinless chicken breast halves. I bought the chicken breast that was already sliced thin. If you buy the regular chicken breast halves you will need to pound them down to 1/4 inch thickness.
-Ritz crackers finely smashed
-1 1/2 cups of spaghetti sauce, heated
First, you take the cream cheese, spinach, 1 cup of mozzarella, and 3 tablespoons of parmesan cheese and mix them very well in a bowl. I had to use an electric mixer in order to get it to the consistency that I wanted it. When it is mixed well, you will take a spoon and spread the mixture on the thin chicken breast. You will then roll up the chicken breast and secure it with toothpicks if necessary.
Next, you will take the beaten egg and put it in one bowl and the crushed Ritz crackers in another bowl. Dip the rolled up chicken in the egg and then turn it over in the crackers until it covered. Place the chicken on a greased baking pan and cook on 375 degrees for 30 minutes. While the chicken is cooking you will heat up the spaghetti sauce to put on top. Once the chicken is cooked, put it on a plate, top with spaghetti sauce and cheese, and serve.
I thought this was a great way to serve chicken parmesan. I am not much of a fan of spinach, but I could not taste the spinach in the meal. The crackers served as a good breading for the chicken. If I were to make this meal again, I would probably use an Italian style breading. This was a great meal idea if you are looking for something easy to make and Italian.
