Slow Cooker Mexican Beef Stew

Dishes that are prepared using a slow cooker can be easier on time and the wallet. You can throw a bunch of ingredients into the slow cooker and let it cook for hours while you are at work or out running errands. This concept was on my mind when I chose the recipe for this week. This is what you will need to prepare this meal.

1 pound of beef stew meat, cut into one inch pieces

2 tablespoons of all purpose flour

1 tablespoon of canola oil

1 can of black beans, rinsed and drained

2 medium carrots, peeled and chopped

1 medium onion, chopped

2 cloves of garlic, minced

1 can of diced tomatoes, undrained

1 can of beef broth

1 1/2 teaspoons of chili powder

1 teaspoon of ground cumin

1/2 teaspoon of salt

3/4 teaspoon of pepper

1 cup of frozen whole kernel corn

This recipe can get messy within the slow cooker so it is recommended that you use a slow cooker liner in order to cut down on the cleanup. Coat the beef with flour and cook in a large skillet over medium high heat with the oil. Cook the meat until it is browned. While the meat is cooking you can add the beans, carrots, onion, garlic, and tomatoes to the bottom of the slow cooker. When the meat is done you can add it on top of the ingredients already in. Next add in the beef broth, chili powder, cumin, salt, and pepper. Cook on low heat for 7 hours or until the meat is very tender. Next add in the frozen corn and let it cook for 10-15 more minutes.

This recipe was really easy to make and didn't take forever to prep. You can get it started before you go into work, and it will be done by the time you get home. The recipe was delicious as well. It came out as more of a chili than a beef stew. I baked cornbread to give the stew some thickness. If i were going to cook this recipe again I would try to add a little more flavor to the stew. One idea was to add some sort of marinade to the chicken before putting it into the slow cooker. Overall the entire family enjoyed this meal, and we will make it again.
